How to use this method:

Food is generally cooked for 1 - 7 hours (longer is some cases) at a temperature typically around 55 to 60 °C (131 to 140 °F) for meat, higher for vegetables. 

Meat vegetable are usually seasoned, or mixed with flavour enhancing properties beforehand. The long form cooking style infuses the flavourinto meat / vegetables faster than marinating.

They then can be seared or broiled before serving for a delicious flavour and texture combination.
